Ingredients

Method

1.Cook penne salted boiling water until al dente. Drain well.
2.Heat 2 teaspoons olive oil in a large non-stick frying pan. Fry capers for 1 minute, or until they burst. Stir in milk, lemon juice, dijon mustard. Season to taste. Bring to the boil, stirring. Reduce heat and simmer for 2 minutes, or until slightly thickened.
3.Stir in salmon and chives. Add drained pasta and parmesan, tossing, for 1 minute. Serve with extra snipped chives.
