Roast beef with marinated zucchini and mint

Cooked to perfection, this juicy roast beef is wonderful served up for dinner with marinated zucchini and fresh mint. This tasty and nutritious meal will satisfy the whole family.

Method

1.Preheat oven to 200°C (180°C fan-forced). Place beef in a roasting pan, drizzle with half of oil and season to taste. Roast 40-50 minutes, or until cooked to your liking. Cover and rest 10 minutes. Slice to serve.
2.Meanwhile, heat remaining oil in a large frying pan on high. Saute zucchini 4-5 minutes, until lightly browned, tossing frequently.
3.Transfer to a bowl and add half of mint, garlic and red wine vinegar. Season to taste. Stand 5-10 minutes. Just before serving, stir through remaining mint.
4.Serve sliced beef drizzled with pan juices, topped with a dollop of yoghurt, with zucchini on side.

As a general rule, 20-30 minutes cooking per 500 grams of beef.
