1.In a large saucepan of boiling salted water, cook pasta following packet instructions. Drain, then return to the pan. Cover to keep warm.
2.In a large frying pan, heat oil on high. Cook chorizo and garlic for 5-6 minutes, stirring, until golden. Add broccolini. Cook for 1-2 minutes until just tender.
3.Toss chorizo mixture, parmesan and parsley with pasta in pan. Season and toss on low for 1 minute.
4.Bring a large frying pan of water to the boil on high. Add vinegar. Slide eggs into simmering water, one at a time. Poach for 2-3 minutes until cooked to taste. Remove with a slotted spoon. Drain on a paper towel.
5.Serve pasta topped with eggs, extra parsley and parmesan.
Note
- If liked, add some halved cherry tomatoes with the broccolini in Step 2.
