Method
1.Cook the spaghetti in a large saucepan of boiling salted water, following the packet instructions.
2.Meanwhile, heat oil in a frying pan on medium. Cook bacon and garlic, stirring, for 2-3 minutes until bacon is beginning to crisp.
3.Add tomatoes and cook, stirring, for 1-2 minutes until tender. Stir in spinach and cook for 1 minute until beginning to wilt.
4.Drain pasta and return to pan with bacon mixture. Season to taste and toss well. Serve topped with parmesan and poached egg.
