Farro with chilli, feta, pumpkin and roast beef

Farro dates back to ancient times and has recently seen a resurgence in popularity. It is full of protein, dietary minerals and vitamins. For this recipe, you’ll need to soak the farro in water overnight.

Method

1.Preheat oven to 180°C.
2.Put farro, water and 2 pinches of salt in a pot and bring to the boil. Reduce heat, simmer for 25 minutes, then drain and leave for 5 minutes.
3.While farro is cooking, rub peanut oil over the pumpkin chunks. Season with salt and freshly ground black pepper, place on an oven tray and roast for 15 minutes or until cooked. Set aside.
4.Rub beef with peanut oil. Heat a frying pan until hot, add beef and brown on all sides. Transfer to a roasting tray, place in the oven and cook until done to your liking. Rest meat for 15 minutes, then slice thinly against the grain.
5.Mix all feta ingredients in a small bowl.
6.Whisk all dressing ingredients together.
7.Transfer farro to a large bowl, add pumpkin, pour over three-quarters of the dressing and mix well. Serve into bowls, arrange feta and beef on top, scatter with salad leaves or microgreens and drizzle with more dressing.
