These crispy skin drumsticks are baked with a fragrant Asian spice mixture. Serve them with fresh lemon wedges and steamed rice for a complete family meal.
1.Combine rice vinegar, cooking wine, soy sauce, brown sugar, ginger, five spice, pepper and salt in a small bowl.
2.Score chicken skin in several places. Place in a shallow dish and rub marinade over chicken. Chill, covered, 2-3 hours.
3.Preheat oven to 220°C (200°C fan-forced). Line a baking pan with baking paper. Heat oil in a large frying pan on high. Cook chicken pieces on high 3-4 minutes each side, until skin is golden and crisp.
4.Transfer to prepared pan, skin side up. Bake 35-40 minutes, until cooked through. Top with onions and serve with rice and lemon.
If preferred, buy a whole chicken and cut into serving portions.
