Method

1.In a small saucepan, combine juice, liqueur and sugar. Stir on high heat, until boiling. Reduce heat to low. Simmer, without stirring, 10 minutes, until reduced and syrupy.
2.Divide sponge roll among serving dishes. Drizzle with warm syrup, followed by custard. Top with orange segments and nuts.

We warmed the vanilla custard in the microwave oven on medium power for 1 minute. Segment oranges by removing the skin thickly and then slicing between the membrane to loosen the flesh.
