Method
1.Grease a 6 cup-capacity pudding basin. Using an electric mixer, beat butter, sugar and citrus rinds until combined. Add eggs, one at a time, beating well after each addition. Combine milk and orange juice. Fold flour, chopped orange and milk mixture alternately into butter mixture, starting and finishing with a little flour.
2.Pour mixture into basin. Cover with greased foil and secure with kitchen string. Place basin in a large saucepan. Pour enough water into pan to come halfway up side of basin. Cover. Boil on medium-low heat, topping up water as required for 1 hr 10 mins, until a skewer inserted comes out clean. Turn out onto a wire rack or plate.
3.Meanwhile, to make orange sauce, combine sugar and cornflour in a small pan. Gradually stir in hot water until combined. Heat on medium, stirring, for 5 mins, until thickened. Stir in remaining ingredients to combine.
4.Drizzle sauce over warm pudding and serve.
