Ingredients

Method

1.Place rice in a bowl. Cover with water. Soak for 3 hours or overnight. Drain.
2.Combine rice, water and spices in a large pan. Bring to the boil. Cook for 40-45 minutes until tender. Drain.
3.Return rice to pan with 1/2 cup coconut cream, 1/3 cup sugar and mixed spice. Stir over low heat until sugar has dissolved. Simmer for 4-5 minutes to absorb liquid.
4.Meanwhile, preheat grill to high. Place bananas and pineapple on a baking tray cut side up. Top with butter. Sprinkle with extra sugar. Grill 5-10 minutes until golden.
5.Serve rice with bananas and pineapple. Drizzle with remaining coconut cream.
