Spiced apple cheesecakes

Served with thickened cream, these delectable mini apple cheesecakes are almost too good to share!

Ingredients

Method

1.Preheat oven to 180°C. Lightly grease 8 holes of 2 Texas muffin pans. Line each hole with 2 thin strips of baking paper, crossing at the base.
2.Cut pastry into 8 x 6cm rounds. Prick in several places with a fork. Place each round in prepared holes. Bake 5-10 minutes, until golden. Cool.
3.In a large bowl, using an electric mixer, beat cream cheese, sugar and spices until smooth. Add yolks one at a time, beating well after each addition. Beat in cream until combined.
4.In a small, clean bowl, using an electric mixer, beat egg-whites until soft peaks form. Gently fold into cheesecake mixture.
5.Top each pastry round with 1 tablespoon of filling. Cover with half of the apple slices.
6.Pour remaining filling evenly over apples. Top with the remaining apple slices.
7.Bake 20-25 minutes, until just firm. Cool in oven with door ajar.
8.Chill for 3 hours or overnight. Sprinkle with cinnamon sugar. Serve with thickened cream.

Brown sugar can be used in place of white sugar to give a slight caramel flavour.
