1.Preheat oven to 200°C/180°C fan-forced. Grease pudding moulds with butter and line bases with rounds of baking paper, cut to fit.
2.Break up chocolate and melt in heatproof bowl over saucepan of barely simmering water. Do not let water touch base of bowl. (Or melt chocolate in microwave on low). Cool slightly.
3.Using electric beaters, beat butter and sugar until pale. Add eggs one by one, mixing well with wooden spoon, then mix in vanilla and flour to combine. Add chocolate and mix well. Divide batter between moulds. Refrigerate until ready to cook.
4.Place in oven and cook for 12 minutes. Remove from oven, run palette knife around pudding, turn upside down and unmould onto serving plates. Carefully remove baking paper and serve puddings with cream or ice-cream.
