Method

1.Preheat oven to moderate, 180°c. Lightly grease a 6-cup ovenproof dish.
2.Spread each slice of bread with butter, then jam. Place in prepared dish, slightly overlapping.
3.In a bowl, whisk together milk, eggs, sugar and vanilla. Pour over bread. Set aside for 10 minutes until some of the mixture has soaked into the bread.
4.Place dish in a large baking pan. Pour in enough boiling water to come halfway up sides of dish.
5.Bake for 25-30 minutes until custard is just set when tested. Cool for 5 minutes before serving with thick cream.

Use any jam of choice for this dish. If liked, replace evaporated milk with half milk and half cream.
