Pear and pecan streusel cake

1.Preheat oven to moderately slow, 160°C. Lightly grease a deep, 20cm spring form pan. Line base and sides with baking paper.
2.Arrange pears on paper towel. Drain well for 10 minutes.
3.Meanwhile, in large bowl, using an electric mixer, cream butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each addition.
4.Sift flour and spice together. Lightly fold into creamed mixture, alternately with the milk.
5.Spread 2/3 of the mixture into base of prepared pan. Top evenly with pears, then spread with remaining mixture.

Streusel Topping

6.In a small bowl, combine flour, sugar and cinnamon. Using fingertips, rub in butter. Add nuts. Sprinkle topping over cake mixture.
7.Bake for 1 1/4-1 1/2 hours, until cooked when tested. Cool in pan 5 minutes, before removing from pan and cooling on a wire rack.

You can substitute any other well-drained canned fruit for the pears.
