Orange cake

Method

Orange cake

1.Preheat oven to 180°C. Grease and line a 22-24cm round cake tin.
2.Cream the butter, sugar and vanilla until fluffy. Add the eggs, one at a time, and beat between each addition.
3.Dissolve the soda in water. Add to the creamed mixture.
4.Mince the orange (peel and all) with the cranberries, then add the walnuts. Stir into the creamed mixture.
5.Sift in the flour, then add the almonds and mix well.
6.Scrape the batter into the tin and bake for 50-60 minutes or until a skewer inserted into the cake comes out clean. Remove from the oven. Cool for 10 minutes and turn out.

Sugar syrup

7.For the sugar syrup, simmer all the ingredients in a pan until it becomes syrupy. When the cake is cold, pour the syrup over and serve.
