Method

1.Preheat oven to 120°C. Line two oven trays with baking paper.
2.In a large bowl, using an electric mixer beat egg whites until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until sugar is dissolved and mixture is thick and glossy. Beat in vanilla and colouring.
3.Using 2 spoons, push heaped tablespoons of mixture onto trays. Top with sprinkles. Bake 1 1/2 hours. Cool on trays in a turned-off oven with the door a jar.
