Ingredients

Method

1.Preheat oven to hot, 200°C. Lightly grease and line an 18 x 28cm slice pan, extending paper 2cm above the edge on the two long sides.
2.In a small bowl, using an electric mixer, beat butter and sugar together until pale and creamy. Beat in egg-yolk. Fold in combined sifted flours, then press mixture into pan. Bake base for 10 minutes. Spread jam over base, then bake for a further 5 minutes.
3.Reduce oven to 180°C. Arrange marshmallows in alternate colours over base. Return to oven for 8-10 minutes, until soft. Remove from oven and sprinkle with coconut while hot. Cool in pan on a wire rack. Cut into rectangles to serve.
