Method
1.Reserve several slices of mango to decorate. In a bowl, combine remaining mango and custard together until smooth.
2.In a small bowl, using an electric mixer, beat cream and icing sugar together until soft peaks form.
3.Spoon both mixtures alternately into 4 serving dishes. Swirl together with a skewer. Decorate with the reserved mango slices.
Always ripen mangoes at between 18-22°C. Do not store them in plastic bags. Ripe mangoes are best eaten on the day of purchase.
