Mango fool

This dessert is simple but delicious with just four ingredients. Topped with sweet Mango slices, this is the perfect Summer snack.

Method

1.Reserve several slices of mango to decorate. In a bowl, combine remaining mango and custard together until smooth.
2.In a small bowl, using an electric mixer, beat cream and icing sugar together until soft peaks form.
3.Spoon both mixtures alternately into 4 serving dishes. Swirl together with a skewer. Decorate with the reserved mango slices.

Always ripen mangoes at between 18-22°C. Do not store them in plastic bags. Ripe mangoes are best eaten on the day of purchase.
