Method
1.In a small saucepan, stir 1/2 cup sugar with 1/2 cup water, ginger and chilli over low heat until sugar dissolves and mixture boils. Reduce heat; simmer 5 minutes or until mixture thickens slightly. Remove from heat. Stir in zest and juice.
2.Preheat a char-grill pan over high heat. Using a small sharp knife, remove cheeks from mangoes. Sprinkle cut sides of mango with remaining sugar. Grill mango, cut-side down, for 5 minutes or until brown.
3.To serve, arrange mango on plates; drizzle with syrup. Serve at once with ice-cream.
Instead of mango, use pineapple if preferred.
