Method

1.Preheat oven to 150°C. Mix rice, coconut milk, vanilla paste and caster sugar in a shallow ovenproof dish. Mix in milk and add lemon peel. Cook for about 1 hour until the rice has nearly absorbed all the milk but is still creamy.
2.Transfer rice to 4-6 ovenproof ramekins, smoothing the top. Sprinkle generously with brown sugar then glaze under a hot grill. Serve hot or cool before serving.
