Method
1.Preheat oven to 160°C/140°C fan-forced. Place pears in a 20cm (base measurement) square ovenproof dish.
2.In a medium heavy-based saucepan, place sugar over moderately low heat. Cook and stir 8-10 minutes or until sugar dissolves and turns a rich golden brown. Remove from heat. Stand 1 minute or until bubbles subside. Carefully stir in 1/2 cup water (mixture may bubble). Add butter and cinnamon. Place over low heat; cook and stir 2 minutes or until melted and smooth.
3.Carefully pour caramel sauce evenly over pears in dish. Bake, occasionally basting pears with caramel sauce, 1 hour or until tender. Serve pears with cream.
Cook up to a day ahead. Cover, then refrigerate. To serve, microwave on High (100%) in 30-second bursts until heated. Use apples instead of pears. You can swap cinnamon for ground ginger or cardamom.
