Banana nut fritters

These sweet little desserts hit the spot for an afternoon treat. Serve with vanilla ice cream and some zest on top give these banana nut fritters another layer of flavour.

Method

1.In a large bowl, sift flours and soda together. Stir in coconut and sugar. Make a well in the centre. Whisk in combined soda water and coconut milk until smooth.
2.To make filling, mix nuts, butter, coconut and sugar together in a small bowl.
3.Using a small knife, cut a lengthways slit into each banana half, to make a small pocket. Push a small amount of filling into each, being careful not to overfill.
4.Heat oil in a medium saucepan on high until a small amount of batter sizzles as soon as it is added (180°C).
5.Working in batches of 3-4, dip banana into batter, allowing excess to drain off. Deep-fry 2-3 minutes, turning until golden. Drain on paper towel. Dust with icing sugar. Serve with zest and ice-cream.

Dust the bananas in a little plain flour before coating them in batter. This allows the batter to adhere to the banana better.
