Banana coconut fritters

Golden, cripsy and stuffed with sweet, ripe banana, these tasty banana coconut fritters are wonderful served hot, drizzled with rich chocolate sauce and dolloped with fresh cream.

Ingredients

Method

1.Sift flour into a large bowl. Stir in coconut, sugar and cinnamon.
2.Make a well in the centre of the dry ingredients. Gradually whisk in combined water, egg yolk and lemon, until mixture is smooth.
3.In a clean bowl, beat egg white until soft peaks form. Fold into batter.
4.Heat oil on medium. Dip banana pieces into batter, draining off excess. Deep-fry in 3 batches for 1-2 minutes, until golden. Drain fritters on paper towel.
5.Before serving, dust with icing sugar. Serve drizzled with chocolate sauce and thick cream, if desired.

If batter is too thick, add another tablespoon of water.
