Baked muffin pudding

The aroma of a chocolate pudding just out of the oven can make your tastebuds dance with anticipation, so get baking!

Ingredients

Method

1.Preheat oven to 180°C (160°C fan-forced). Lightly grease a 1.5L casserole dish.
2.Slice muffins into 5mm slices. Arrange in base of prepared dish.
3.In a bowl, whisk together cream, milk, eggs, sugar and vanilla. Pour over muffins. Sprinkle with ground nutmeg and cinnamon.
4.Place dish in a baking pan. Add enough warm water to come halfway up side of dish. Bake for 55-60 minutes, until firm. Serve with ice-cream, if you like.

To prevent over-cooking, remove pudding from water bath as soon as you remove it from the oven.
