Apple and marmalade streusel puddings

Spoil the family with these tasty little puddings, served with lashings of custard or cream.

Method

1.To make streusel, blend or process ingredients until combined. Roll into a ball. Enclose in plastic wrap; freeze 1 hour or until firm.
2.Preheat oven to 200°C/400°F. Grease four ¾-cup (180ml) ovenproof dishes.
3.Peel and core apples, then thinly slice.
4.Melt butter in a medium frying pan; cook apple, the water and sugar, stirring, about 10 minutes or until apple is tender. Stir in marmalade. Spoon mixture into dishes.
5.Coarsely grate streusel onto a sheet of baking paper; sprinkle over apple mixture.
6.Bake puddings about 20 minutes or until browned lightly. Dust with sifted icing sugar before serving. Serve with custard, cream or ice-cream.

The cooked apple mixture can be stored, covered, in the fridge overnight. Streusel can be frozen for up to a week.
