Ingredients

Method

1.Preheat oven to moderate, 180°C. Grease four 10cm shallow pie dishes (or a 23cm pie plate).
2.Lightly coat tortillas on both sides with olive oil. Push into pans (or arrange overlapping in pie plate). Bake 10 minutes, until crisp.
3.Heat oil in frying pan on high; saute onion 2-3 minutes. Add mince; brown well 5 minutes.
4.Stir in chilli seasoning mix and water. Simmer 5-10 minutes, stirring occasionally, until cooked through. Blend in five bean mix. Allow to cool, then stir egg through.
5.Spoon mixture into prepared cases, smoothing top. Sprinkle cheese over. Bake 15-20 minutes, until mince is heated through and cheese has melted. Serve with salsa and sour cream.

To make salsa, combine corn kernels, chopped cucumber, avocado, tomato, coriander and a little chopped chilli.
