Method

1.Combine flour and yeast with 1 teaspoon of salt in a large bowl. Add water and milk and whisk until smooth. Cover with plastic wrap and a tea towel. Set aside in a warm place for 1 hour, until batter doubles in size.
2.Lightly grease 6 egg rings. Grease a large, non-stick frying pan and heat on medium. Place egg rings in pan and pour in batter until rings are three-quarters full. Cook for 6 minutes, until surface is covered with holes. Remove egg ring and turn crumpet to colour other side. Cool on a wire rack.
3.Toast crumpets and serve with butter and jam.
