1.Preheat sandwich press on high.
2.Brush each slice of lavash with oil and then place 4 of them on a board with the oiled side facing down.
3.Top 2 of the sandwiches with pancetta, basil and mozzarella, and the other 2 with chutney, cheese and onion.
4.Place remaining 4 lavash slices on top, oiled side up. Lift the first sandwich onto sandwich press. Close press and cook for 2-3 minutes, until golden and crisp. Repeat with remaining sandwiches.
5.Cut each sandwich in half lengthways, then cut each half into 6 fingers.
Try another filling of cream cheese, smoked salmon slices, capers and dill. Prepare sandwiches ahead of time and cook as required.
Note
