1.Process camembert, half the honey, 2 tablespoons of the cream and half the vanilla paste in a food processor until smooth.
2.Combine orange, raspberries, juice, remaining honey, figs, almonds and mint in a large bowl.
3.Cut each slice of bread into 3 equal rectangles. Whisk eggs, remaining vanilla paste, sugar and remaining cream in a medium shallow bowl.
4.Heat oil in a large frying pan over moderate heat. Dip bread, one piece at a time, into cream mixture. Add to pan. Cook, in batches, for 1-2 minutes each side or until golden brown. Drain on paper towels.
5.Spread French toast with cheese mixture. Top with fruit salad.
You could use fresh ricotta instead of camembert, if you like. You won’t need to blend it – just combine the ingredients in a bowl. Use up leftover bread for this recipe, and reduce household food waste.
Note
