1.Start this recipe the night before. Halve and core unpeeled apple; cut one half into matchsticks. Wrap other apple half in plastic wrap and refrigerate until needed (rub the surface with a little lemon juice to stop it from browning).
2.Combine oats, juice, yoghurt, vanilla and apple matchsticks in a small bowl. Cover with plastic wrap; refrigerate overnight.
3.The next morning, cut remaining apple half into matchsticks (or cut into a small dice). Gently fold half the raspberries into the oat mixture; sprinkle with the apple, raspberries and nuts to serve.
For a citrus twist, add a little finely grated orange rind and replace the apple juice with orange juice. Replace the raspberries with blueberries and sprinkle with lightly roasted hazelnuts.
