1.Heat a large non-stick frying pan over high heat. Add coleslaw mix. Cook and stir for 5 minutes or until soft. Cool slightly. Whisk eggs in a large bowl. Stir in prawns, 1 1/2 cups of the sprouts and cooked coleslaw mix.
2.Place pan over moderately high heat. Cooking 4 omelets at a time, add 1/3 cup of egg mixture to pan. Cook for 3-4 minutes or until just set.
3.Turn and cook for 2 minutes more or until omelets are cooked through. Transfer to a plate; cover with foil to keep warm. Repeat to make 12 omelets. Drizzle omelet stacks with gravy. Top with remaining sprouts to serve.
4.To make the gravy: Follow packet directions, adding 1 cup water.
Try using leftover shredded cooked chicken, cans of drained crab meat or sauteed mushrooms instead of prawns. You can use oyster sauce instead of gravy. You’ll find the coleslaw mix in the fruit and vegetable section at supermarkets.
