1.Cut 3 large pomegranates in half. Fill a large bowl with cold water, working with one pomegranate half at a time, submerge in water and loosen the seeds into the water. Skim off any white pith that floats to the surface, then strain seeds through a sieve. Reserve 1/4 cup seeds to serve. Process remaining seeds until almost smooth. Push mixture through a fine sieve to extract juice. You will need 1 1/4 cups of juice. Discards solids.
2.Combine 1 cup chilled clear unsweetened apple juice, 1 cup strained lime juice, 1 cup chilled pink grapefruit juice and the pomegranate juice in a large jug. Pour over ice in glasses and garnish with extra pomegranate seeds.
