Method
1.Place the tomato, onion, capsicum, coriander, lime juice, one tablespoon of the olive oil and tabasco in a medium bowl; stir to combine.
2.Heat remaining olive oil in a medium frying pan. Cook tortillas, one at a time, until lightly browned both sides; drain on absorbent paper. Cover to keep warm.
3.In the same pan, fry the eggs until crisp around the edges and the egg yolk is still soft.
4.To serve, top each tortilla with an egg and cheese.
