Honey, cinnamon and brown butter breakfast bars with puffed millet

Method

1.Preheat the oven to 160°C and line a slice tray with baking paper.
2.Melt the butter in a small saucepan over medium heat and simmer until browned with a beautiful nutty fragrance. Set aside to cool.
3.In a large mixing bowl, add the puffed millet, rice flour, shredded coconut, apple pieces and cinnamon.
4.Once the butter has cooled, whisk in the honey and eggs. Add to the dry ingredients and mix until well combined.
5.Transfer the mixture into the lined tray, and press down evenly. Bake in the oven for 20-25 minutes or until golden on top. Remove from the oven, and set aside to cool completely before slicing into bars.
