Fried eggs and bean pizza

1.Preheat oven to 240°C/220°C fan forced. Grease a large baking tray: place pizza base on tray.
2.Heat a small frying pan over high heat. Cook and stir chorizo for 2-3 minutes or until browned. Transfer to a plate and drain on paper towels. Combine the beans. salsa and 2 tablespoons of the coriander in a small bowl.
3.Spoon bean mixture over pizza base. Sprinkle with chorizo and 1/2 cup of the cheese. Bake for 10 minutes. Carefully crack eggs onto pizza; sprinkle with remaining cheese. Bake for 5-7 minutes or until crust is crisp and eggs are set to your liking. Sprinkle with remaining coriander and serve at once.

Budget tip: Use any leftover bean and chorizo mixture to fill flour tortillas or top pizzas. Mexe-beans are canned red kidney beans cooked in a spiced brine; available in the Mexican food aisle. We used a spicy tomato salsa.
