Dill mayonnaise
Method
1.Combine fish, breadcrumbs, onion, parsley, egg and lemon juice in a food processor. Process until almost smooth. Season to taste. Transfer to a bowl and chill 15 minutes.
2.Using wet hands, shape tablespoonfuls of mixture into balls. Arrange on trays.
3.Half-fill a deep saucepan with oil and heat on medium.
4.Deep-fry fish balls, in 5 batches, 3-4 minutes each batch, turning, until golden and cooked through. Drain on paper towels.
5.Meanwhile, to make dill mayonnaise, in a small bowl, combine all ingredients.
6.Serve fish balls with lemon wedges and dill mayonnaise.
