1.Halve baguette horizontally. Remove some of the soft centre, leaving a hollow bread case.
2.Layer rocket, ham, capsicum, cheese and tomatoes into bread cavity until full. Replace top.
3.Wrap baguette firmly in foil or plastic wrap, securing with string. Chill for 3 hours or until required. Cut in half before serving.
Process centre of baguette into crumbs, place in a freezer bag and freeze for later use. Warm baguette in an oven at 180°C to crisp bread and melt cheese.
Note
