Method
1.Preheat oven to hot, 200°C.
2.Place potatoes and onion in a baking dish. Add oil and paprika, tossing to coat. Bake for 20 minutes
3.Add ham and tomatoes. Bake for a further 8-10 minutes, until potato is golden and tender.
4.Serve topped with fried egg. Sprinkle with parsley.
