Method
1.Place oil in a small frying pan over moderate heat. Cook bacon for 3 minutes or until crisp. Drain on paper towels. Cool. Combine bacon and ice-cream in a metal bowl. Cover with plastic food wrap; freeze for 30 minutes or until firm.
2.Meanwhile, place blueberries and icing sugar in a medium frying pan over moderate heat. Cook, stirring, for 3 minutes or until blueberries begin to soften and liquid becomes syrupy.
3.Heat crepes as packet directs. Fold into quarters and place on sewing plates. Top with a scoop of ice-cream and blueberries. Serve drizzled with maple syrup and dusted with extra icing sugar.
Swap honey for maple syrup. To make crepes Sift 3/4 cup plain flour into a bowl. Add 3 eggs and 3/4 cup milk until smooth. Stand for 10 minutes. Cook 1/4-cup quantities in a lightly oiled pan over moderate heat for 1-2 minutes each side.
