1.Place cabbage in a colander in the sink and pour boiling water over. Rinse under cold water, then squeeze out excess liquid.
2.In a large bowl, combine cabbage, potato, cheese and green onion, mixing well. Season to taste. Set aside.
3.Heat butter and oil together in a non-stick frying pan on medium. Add potato mixture, spreading evenly over the base. Reduce heat to low and cook for 15-20 minutes, until base is crisp.
4.Place under a preheated grill and cook for 2-3 minutes, until the top is golden. Rest in pan 5 minutes. Invert onto a board. Serve in wedges with baby spinach, truss tomatoes and a fried egg.
To make 3 cups mashed potato, you’ll need to cook 1kg potatoes and mash with 1/2 cup milk and 30g butter. You can add any leftover cooked vegies you have on hand.
