Method
1.Sift flour, sugar and bicarbonate of soda into a large bowl. Whisk egg, buttermilk and oil in a jug. Gradually stir egg mixture into flour mixture until smooth. Stir in apple.
2.Spray a non-stick frying pan with cooking oil spray and heat on medium. Cooking in several batches, drop heaped tablespoons of batter into pan. Cook pikelets for 1-2 minutes, until bubbles appear on surface. Turn to lightly brown other side. Transfer to a plate and keep warm. Continue with remaining batter.
3.Serve each pikelet with a dollop of raspberry jam.
You can freeze the pikelets, once cooled, in a resealable plastic bag.
