Apple pancakes with vanilla mascarpone

Light, golden and fluffy, these divine pancakes are stuffed with fresh, juicy apple pieces to create a sweet brunch dish. Serve these fruity pancakes drizzled with oozing maple syrup and topped with a dollop of thick vanilla marscapone for a brilliant weekend breakfast.

Ingredients

Method

1.Sift flour and soda together into a large bowl. Stir in sugar. Make a well in the centre of the flour mixture. Gradually whisk in combined buttermilk and egg, until smooth. Cover and set aside until required.
2.Melt butter in a large frying pan on medium. Add maple syrup; bring to simmer. Add apple slices in single layer. Cook 1 minute each side. Remove and set aside. Wipe pan clean.
3.Melt 1 teaspoon extra butter in pan. Place 2-3 apple slices in pan. Pour about 1/4 cup batter over, to just cover apples. Cook 1-2 minutes, until bubbles appear on surface and underside is golden. Turn pancake. Cook further 1-2 minutes, until cooked through. Repeat with remaining apple and batter, adding extra butter to pan as required.
4.In a small bowl, whisk mascarpone and vanilla seeds together. Serve pancakes with vanilla mascarpone and extra syrup.

These pancakes freeze well. Thaw before using and reheat individually in the microwave on high (100 per cent) power about 10 seconds.
