Method
1.Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease and line a 3cm deep, 20cmx30cm slice pan with baking paper.
2.Place flours, coconut, icing sugar and butter in a food processor. Pulse until mixture resembles breadcrumbs. Add egg, processing until dough just comes together. Turn out onto a lightly-floured surface. Knead gently until smooth.
3.Press two thirds of dough into base of pan to an even thickness. Chill until required.
4.Shape remaining dough into a thick log and wrap in plastic wrap. Freeze for 30 minutes, until firm.
5.Spread apple evenly over dough base. Sprinkle with cranberries, brown sugar and cinnamon. Grate frozen dough over the top. Sprinkle with extra coconut.
6.Bake 35-40 minutes, until firm to the touch. Allow to cool completely in pan. Cut into squares to serve.
This slice can also be eaten warm with custard, cream or ice-cream as a delicious dessert. Store in an airtight container.
