Preheat oven to moderate, 180°C (160° fan-forced). Lightly grease a 5-cup ovenproof dish.

In a bowl, using an electric mixer, beat eggs until fluffy. Add sugar, 1 tablespoon at a time, beating until thick and creamy.

Sift flour and spice together over egg mixture. Fold gently through. Spoon apples into dish and pour egg mixture over.
4.
Bake 30-35 minutes, or until sponge is cooked when tested with a skewer. Serve warm with a cream or ice-cream, if desired.
Try making your own stewed apple: Golden Delicious, Royal Gala, Granny Smith and Pink Lady are apple varieties that are good for cooking. Add a little water and sugar to taste, and cook until pulpy.
