Method
1.Grease a round 26cm x 4cm-deep microwave-safe quiche dish. Grease outside edges of a microwave-safe ramekin (8cm) and place in centre of dish base-side down to form a ring-style pan.
2.Place butter and sugar in a bowl and beat with an electric mixer for 3 minutes, until light and fluffy. Add flour to mixture and stir until well combined. Press firmly into prepared dish.
3.Place extra butter, extra caster sugar and grated rind in a bowl, and beat with an electric mixer until just combined. Add eggs, 1 at a time, beating well after each addition. Add almond meal and use a wooden spoon to stir until well combined.
4.Spread slice mixture evenly over base of prepared dish, then sprinkle over flaked almonds. Microwave, uncovered, on medium for 5 minutes.
5.To make apricot glaze: Place jam in a small, microwave-safe bowl, cover and microwave on high for 1 minute, until runny. Immediately brush over warm slice. Cool in dish. Slice to serve.
