Confetti salad

This colourful confetti salad with shredded cabbage and crunchy capsicum and a zesty lemon honey dressing is a crisp and tasty side dish

Ingredients

1/2 cup (125ml) buttermilk

2 tablespoon lemon juice

2 tablespoon honey

1 clove garlic, crushed

salt and pepper, to season

4 spring (salad) onions, sliced

1 red capsicum, cut into long strips

1/2 small red cabbage, finely shredded

1/4 small green cabbage, finely shredded

Method

1.Combine buttermilk, lemon juice, honey and garlic in a jug and season to taste.

2.Combine remaining ingredients in a salad bowl. Drizzle with dressing and toss to coat. Set aside for about 30 minutes to soften, then serve.
