This low carb cauliflower mash recipe is also paleo, low-GI and tastes just as good as potato mash.
Cut cauliflower florets so they’re even sized and cook evenly
Bring water or stock to a simmer and add cauliflower. Simmer for 6-8 minutes with the lid on
Drain then blend with a stick blender until smooth
Add grated parmesan and season to taste and a sprinkle of herbs
