Cheese and cauliflower pizza

This clever recipe really cuts down the carbs and uses nutrient-rich cauliflower as the pizza base, rather than heavy dough. A great gluten-free alternative

Method

1.Preheat oven to 200°C. Line a large pizza tray with baking paper.
2.Place cauliflower in a microwave-safe bowl. Cover with plastic wrap and microwave on high for 8-10 minutes until tender. Drain well, then squeeze out any excess moisture.
3.Transfer cauliflower to a bowl with cheeses and egg. Season and mix well. Press mixture firmly out over tray to make an even 1cm-thick round. Bake for 15-20 minutes until lightly golden.
4.Spread passata over base. Top with chorizo, onion, capsicum and bocconcini.
5.Bake for a further 8-10 minutes until cheese melts. Serve topped with basil leaves.

Cauliflower is full of antioxidants, rich in fibre and vitamin C, and is a natural detoxifier and an anti-inflammatory.
