Eight ways with sun-dried tomatoes

Sweet, juicy and tart; we show you our favourite ways to incorporate these versatile and flavoursome dried fruits into your meals.

Pesto: Blend semi sun-dried tomatoes in a food processor with garlic, lemon juice, a drizzle of olive oil and a few pine nuts until a paste forms. Toss through wholemeal pasta or steamed veg, or use as a dip or spread.

Pizza Add a handful of juicy sun-dried tomatoes to your next homemade pizza for a real flavour punch. You’ll find it goes perfectly with oozing melted cheese, olives and crisp pancetta.

Sandwiches: Try turkey, lettuce, avocado and semi sun-dried tomatoes on wholemeal bread, or reduced-fat cream cheese, smoked salmon, thinly sliced red onion, rocket leaves and semi sun-dried tomatoes on rye.

Canapes: Use semi sun-dried tomatoes to make a quick canapé. Spread a little reduced-fat ricotta on a Cruskit and top with a semi sun-dried tomato, a sprig of fresh dill and cracked black pepper.

Pasta: Fry chopped garlic in a little olive oil, then toss with spaghetti, thinly sliced semi sun-dried tomatoes, chopped fresh flat leaf parsley, olives, lemon juice and capers. Top with shaved parmesan.

Bruschetta: Puree semi sun-dried tomatoes using a food processor. Spread over toast and top with fresh basil leaves and sliced bocconcini. Or try slices of smoked salmon with the pureed semi sun-dried tomatoes, a small dollop of sour cream and a sprig of fresh dill.

Scones and muffins: Add chopped semi sun-dried tomatoes to pumpkin scone mix, or stir them into a muffin mixture with grated reduced-fat cheddar, grated parmesan cheese and chopped fresh chives.

Dip: Combine chopped semi sun-dried tomatoes with sour cream and finely chopped fresh basil to make a dip. Serve with carrot and celery sticks, radish quarters, sliced capsicum and steamed asparagus spears.

Stuffing: Combine finely semi sun-dried tomatoes with fresh wholemeal breadcrumbs, crumbled reduced-fat feta, finely grated lemon rind and fresh herbs to make a stuffing for roast chicken. Or make a pocket in the centre of a chicken breast and fill it with the stuffing.
