Mexican madness: taco tips you need to know

Any tasty meal that allows you to get creative with minimal mess is just fine in our books! Tacos are classic family fun as they allow each person to mix and match their own basic ingredients to create the meal that suits them best.

Magic marinade

Blend coriander, lime and chipotle chilli from a can to marinate meat, fish or veg. It adds a smoky flavour and you can mix leftovers with mayo to make a dressing. For more of a spicy kick use chilli powder, cumin and paprika as a marinade.

Change your cheese

Do as the Mexicans do and never use cheddar. Try a hard ricotta instead – it’s very similar to the Mexican queso fresco. Grated haloumi is a good substitute too but can be overpoweringly salty if you don’t grill it. Just pop your haloumi slices in a pan and grill for roughly 30 seconds on each side.

Get shell smart

If you’re using soft-shell tacos, char-grill in a pan first to bring out the flavour. For hard shells, ditch runny salsa and make your own with chunky tomatoes and a nice balance of lime and salt to take your tacos to the next level! You’ll enjoy it even more with the knowledge that those zesty flavours are the product of your own kitchen expertise.
