Cheesy gnocchi bake with bacon and broccoli

  • 500 gram gnocchi
  • 1 head broccoli, florets and stalks cut into 1cm pieces
  • 10 gram butter
  • 1 red onion, thinly sliced
  • 1 garlic clove, finely chopped
  • 2 teaspoon lemon thyme leaves, plus sprigs to serve
  • 1/2 cup cream
  • 150 gram mozzarella, finely chopped
  • 6 rindless bacon rashers, torn

    In a large saucepan of boiling salted water, cook gnocchi and broccoli for 2 minutes or until all pieces float on the surface and are just tender. Drain well.

    In a large, flameproof baking dish, melt butter on medium. Sauté onion, garlic and thyme for 4 minutes. Stir in cream. Preheat grill to high.

    Toss gnocchi and broccoli through cream mixture. Season to taste. Arrange mozzarella and bacon on top of dish. Grill for 5 minutes until broccoli is cooked and bacon is crispy.
